Bengali Edd Pudding Recipe

This is my mom’s recipe for Egg Pudding. It’s super simple but it does take a lot of whisking. Just about every person in Bangladesh with access to some kind of oven has their own variation of this recipe; some people like to add coffee flavoring or espresso to theirs while others like to add vanilla extract. It can be made without any extra flavoring though, with just eggs, milk, and sugar.

Traditionally, we make it for holidays, parties, or family gatherings. My mom would make huge batches that could feed 100 people for family parties. This recipe will make a small round pudding, about 8 inches in diameter.

The basic recipe is:

A pinch of salt (1 teaspoon)

Half a can of sweetened condensed milk (7 oz.)

5 eggs

A splash of milk (2 teaspoons)

3 heaped teaspoons of milk powder

1-2 cardamom pods (for fragrance)

5-6 teaspoons of sugar

Optional: vanilla extract/ coffee flavoring

Baking time: around 40 minutes

Baking method: water bath
